As most of the value add is done in our central kitchen, our stores are small, simple and affordable.

By example, we have stores as small as 15 sqm in size. There is no “back of house” in our stores-all work is done in front of the customer so you don’t forget to say hello!

As a franchisee, the only products you are required to “make” are the fresh baguettes and sandwiches (to ensure freshness).

You are required to “bake” our pies, sausage rolls, pastries, muffins, cookies and quiche, but “baking” is a simple process and can be taught to you in a matter of hours. The beauty of our model is that you only do what is most important to the customer-you provide a freshly baked product, which not only tastes better, but it also smells better (differentiating you from all the other guys selling coffee and baked goods).

As all product is pre made/baked (as opposed to made/baked to order), you are free to do your chores in the slow times and to focus on customers during the busy times-this allows for maximum turnover with minimal staff.

We have some of the fastest transaction times in the industry. (After all, how long does it take to put a pie in a bag and collect $4.75?) It is certainly faster than making a sandwich or a hamburger to order! Most of our stores can be run with no more than 2/3 people during the busiest periods and with 1 person during slower periods. We operate some stores 24 hours per day and this is possible because the store can be run profitably with 1 person during the slower weeknights.

Considering that you are receiving a near finished product to your store each day, our gross margins are very attractive relative to our peers.

The addition of high margin coffee and cold drinks makes this equation even better. The only thing you must focus on is stock control/wastage, which is much easier if you have “ready to bake” product vs “finished” product.

Notwithstanding the fact that you bake most of your product each day, the start times are not demanding (about 1 hour prior to trade).

Remember, you are not making bread from scratch; you are simply pre-heating the oven for 20 minutes and baking/heating. There is a big difference between 2am starts and 6/7am starts!!!

Our royalties and marketing levies are extremely fair at 6% and 2.5% respectively-especially given what sits behind your store (a fully developed supply chain servicing a truly unique brand!!!)

It goes without saying that if the business model is simple, the training required is also simple. Our training program revolves around our operating philosophy, which is called the “4Fs”, being:

As we do most of the “value add” in our central kitchen, it allows for our stores to be highly compact and cost effective in terms of fitout cost and operating cost. Most of our stores cost around $400k on a fully turnkey basis. In addition, most of our stores can be run with only 2 people, making them ideal for owner/operators and families.
