I have been involved with the retail food industry since I was 17 firstly working thru the McDonalds system, both with the corporate company and also managing multi store units for one of the first Australian franchisees. At this time one of the stores in the portfolio was the highest volume McDonalds store in Australia.

Following on from this I was approached to set up Delifrance in Australia as Operations Director opening 22 stores including the first 4 franchisees. After leaving Delifrance I was very keen to remain in the food industry but wanted to join a company that has a great brand potential. I found this in Pie Face.
I purchased the Parramatta rail store and found the system to be very simple, has great quality control (as Pie Face source from their own factory), requires minimal labour (outside the owner operator) and is one of the only real “fresh” concepts I know of as everything is baked on site each day.

I believe the opportunity for this brand is significant and feel it is important as a new franchisee to join a company that not only has a good system but is also relatively new to the marketplace. This enables the franchisee to grow with and contribute to the success achieved.

Bill Chen purchased the Pitt St Sydney CBD Pie Face store from Pie Face in August 2009. Since taking the company owned store over to franchise ownership, the store has improved sales.

“Since I purchased the Pie Face Pitt St store, it has met my expectations in terms of sales and profitability. The store is very busy, and because of the store size, the overheads are low. The location is good. And there is room for plenty of growth in coffee sales and catering which keep climbing weekly.
Customers are also really starting to understand Pie Face’s unique Wake me up!!! coffee offering. We are finding we are getting lots of customers purchasing a strong (Start My Heart or Kick My Arse) coffee in the morning and a weaker (Tingle my Toes) coffee in the afternoon. I often ask feedback from customers, and they tell me the food (in particular the pies) are excellent!

The Pie Face team have been very helpful as well. They ensured I was trained properly so i felt very comfortable stepping into the store. They are also very responsive if i need assistance. Because they have an owner’s mentality after initially operating all of their stores, I feel like we are on the same team when it comes to improving the business and making things run smoothly.

Julie and Koloa recently launched the Pie Face international airport food court location in October 2009. Immediately successful, the store has demonstrated capability of the Pie Face all day part format.
Koloa has had various Food and Beverage management roles within the hospitality industry. These roles have been within the 5 star hotel market with companies such as the Ritz Carlton Hotels, Stamford Hotel Group and Duty manager at the Qantas First Lounge at Sydney International Airport. Julie also has a hospitality/travel and tourism background and extensive airline experience namely with Cathay Pacific Airways.
